Using purchase orders is great if your items tend to vary in price. This is because you can change the price for each order.

Calculate Bill of Material's Cost of Goods
The cost of goods sold for a Bill of Materials is calculated based on item price and quantity used.

If your item price doesn't change frequently then supplier items are great since you can set each item price as default.
